Potato and Corn Chowder

Potato and Corn Chowder

3 cups red potatoes
2-3 large ears fresh corn
1 red onion, peeled
1 tablespoon minced garlic
1/2 package diced thick cut or slab bacon, Optional
1 stick butter
1/4 cup sour cream or kefir
1 cup half and half cream or kefir
3 cups chicken broth (enough to cover potatoes)
1 cup water
1 tablespoon herbs
1 tsp. cayenne powder
1 tsp. parsley
Chives and Grated Sharp Cheddar as Garnish (optional)
Salt and Pepper to Taste

Grilled Carrots with Cilantro and Lime

 

Ingredients:

6 medium carrots (about 1 lb.)

2 Tbsp. olive oil, divided

1Tbsp. chopped cilantro

1 tsp. lime juice

Salt and Pepper

 

Directions:

Trim ends from carrots. Scrub and peel, if you like, and brush with 1 Tbsp. olive oil.  Grill over medium heat until crisp tender, turning occasionally. Meanwhile, stir together remaining oil, cilantro and lime juice in a small bowl.

Season to taste with salt and pepper and brush on warm carrots before serving.

Ingredients

  • 7 to 9 beets, peeled, quartered
  • 1 1/2 cups water
  • 3/4 cup brown sugar, packed
  • 1/3 cup balsamic vinegar
  • 2 tablespoons butter

Directions

  1. Combine beets with water, brown sugar , vinegar, and butter.
  2. Bring to a boil.
  3. Reduce heat to medium and continue simmering uncovered, for about 1 hour, or until beets are tender and most of the liquid has boiled away

Green Beans with Garlic

Ingredients

  • 1 pound green beans
  • 1/4 cup water
  • 1 to 2 garlic cloves
  • 3 Tbsp unsalted butter or extra virgin olive oil

Directions

  1. Steam green beans until tender.
  2. Mince garlic. Melt butter or oil in skillet over medium heat.  Add the garlic and sauté 2-3 minutes.
  3. Add steamed beans and stir gently until they are coated with garlic butter.  Mmmm!

Rutabaga & Apple Casserole

Ingredients

  • 3 cups peeled sliced rutabaga
  • 2 med. apples, sliced
  • 1/2 c. brown sugar, packed
  • 3 tbsp. butter
  • Salt

Directions

  1. Cook rutabaga slices in boiling salted water until just tender; drain.
  2. Place half of slices (rutabaga) and half of apple slices in greased 1 quart casserole.
  3. Sprinkle with half of brown sugar and dot with half of butter.
  4. Sprinkle with salt. Repeat layers. Bake, covered at 350 degrees for 30 minutes.
