Ingredients

  • 2½ lbs.  Beets
  • 2 Tbsp. olive oil
  • 1   onion, chopped
  • 1 Tbsp.  finely chopped fresh gingerroot
  • 5-6 cloves fresh garlic, finely chopped
  • ½ tsp. turmeric
  • 1 tsp. caraway seeds
  • 1 tsp. dill seeds
  • ½ tsp. black pepper
  • ½ tsp salt (to taste)

GREEN Drink Smoothie

Place in blender:

  • 2-3 cups fresh pineapple with 2 cups water OR 2-3 cups canned pineapple with juice OR 3 cups pineapple juice
  • 1 banana
  • 1/2 cucumber
  • 2 stalks celery
  • HUGE handfuls of whatever greens (mix and match):  
  • Spinach, Kale, Collards, beet or carrot tops, etc.
  • 1/2 cups fresh parsley
  • 1/4 cups fresh mint

Blend until well mixed.  Enjoy the refreshment!

Spinach Dip  Directions

  • 1 c chopped fresh spinach
  • 1 c plain yogurt
  • 1 c mayonnaise
  • 2 tsp seasoning salt
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp garlic salt
  • 1/4 tsp dried parsley
  • 1/4 tsp dried mustard

  Directions   Mix together in medium bowl and chill until serving.

Ingredients

  • 1 med. onion
  • 1 med. cucumber (not seeded)
  • 3/4 c. chicken broth
  • 1 c. yogurt (plain)
  • 1/2 can cream of chicken soup
  • 6 dashes Tabasco sauce
  • 6 dashes Worcestershire sauce
  • 1/8 tsp. celery salt
  • 1/4 tsp. curry powder

Directions

  1. Using a blender, chop and blend together onion, peeled cucumber and chicken broth.
  2. Add yogurt, soup and flavorings.
  3. Blend well.

  • 1 pound 3 ounces sweet potatoes, peeled and cubed
  • 1 1/4 cups plain yogurt
  • 3/4 cup packed, dark brown sugar
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 5 egg yolks
  • salt
  • 1 (9-inch) deep dish, frozen pie shell
  • 1 cup chopped pecans, toasted
  • 1 tablespoon maple syrup

Stuffed Dates

Ingredients

  • 1 lb. pitted dates
  • 1 (3 oz.) pkg. cream cheese, at room temperature
  • Sugar for rolling
  • Chopped walnuts (optional)

     

Directions

  1. Soften cream cheese after it is at room temperature and pack into a pastry bag with a large tip.
  2. Stuff dates with cream cheese at the open end. Walnuts may be inserted, if desired.
  3. Roll stuffed dates in sugar and keep refrigerated until ready to serve.

Dixie Salad

Ingredients

  • 4 medium-sized pomegranates
  • 4 apples
  • 1 pint cream
  • 1/4 cup sugar
  • 1 tsp vanilla

Directions

  1. Seed pomegranates
  2. Wash, core, and chop apples
  3. Put pomegranates and apples in large bowl
  4. Whip cream, add sugar and vanilla
  5. Gently fold apples and pomegranates into whipped cream

Bananas, mandarin oranges and nuts can be added to make it extra special.

  • 1 (10 oz.) pkg. frozen spinach, thawed and drained
  • 1 c. shredded Swiss cheese
  • 1/2 c. onions, chopped
  • 1 1/2 c. milk
  • 3 eggs
  • 3/4 c. Bisquick baking mix
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. ground nutmeg
  • Chopped ham, if desired

Spiced Applesauce

Ingredients:

  • 3-4 baking apples.
  • 3-4 Tbsp honey, maple syrup or sugar, to sweeten
  • 1/2 tsp. cinnamon
  • 2-4 Tbsp water

     

Directions:

  1. Peel, quarter,and core apples.  Put in a small saucepan.
  2. Add honey, cinnamon, and water.
  3. Cover.  Simmer on low heat, stirring occasionally, for 15 min, or until apples are tender.
  4. Mash with potato masher.  

Serve warm with pancakes, French toast or Potato pancakes.  

Delicious all by itself too!
