Turnip Soup with Turnip greens*


  • 1 bunch turnips with greens (2-3 turnips)
  • 2 small onions or leeks
  • 2-3 cloves garlic
  • 2 T olive oil
  • 2 slices bacon, chopped small  OPTIONAL
  • 4-6 cups vegetable or chicken broth
  • Salt
  • Pepper


1. Remove greens from turnips, wash and rinse well, cut into thin strips.2. Peel and cut turnips into small chunks.3. Peel and chop onion and garlic.4. Heat oil in medium pot over medium heat. 5. Add bacon (if using) until it starts to render its fat.6. Add onion or leeks, stirring gently until soft, about 3 minutes.7. Add garlic, turnip chunks and broth.8. Bring to a boil then reduce to simmer until turnips are tender (8-10 minutes).9. Stir in turnip greens and continue cooking until greens are tender (about 2 minutes)10. Salt and pepper to taste.

Makes 4-6 servings

*Turnips are root vegetables.  The entire plant is edible: the root can be eaten raw or cookedand the greens can be eaten like any other leafy green.  They are high in Vitamin A, Vitamin C and fiber.
