Yummy Zucchini Soup

 

3 cups sliced zucchini

1/2 cup water

1 Tbsp minced onions

1 tsp seasoned salt

1 tsp parsley flakes

1 bullion cube

 

Combine in a pot and cook until tender. Blend in blender until creamy and set aside.

 

2 Tbsp butter

2 Tbsp flour

1 bullion cube

1/8 tsp pepper

 

Blend in pan then add:

 

1 cup milk

1/2 cup light cream (half & half)

 

Cook until sauce thickens then add squash mixture. Season to taste & serve. Good with a dollop of sour cream on top.


This recipe works well with any type of squash.
