Creamed Carrots in White Sauce

Ingredients

  • 8 medium carrots (1 pound), cut into 1/4-inch slices
  • 1/2 cup chopped onion
  • 1 cup Basic White Sauce(recipe below)
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons minced fresh garlic chives for garnish

Directions

  1. In a saucepan, bring 1 in. of water to a boil.
  2. Place carrots and onion in a steamer basket over the boiling water
  3. Cover and steam for 8-10 minutes or until crisp tender.
  4. Remove basket; drain liquid and return vegetables to the pan.
  5. Add white sauce, butter, parsley, salt and pepper
  6. heat through. 

Yield:4 servings.

 

White Sauce

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • Dash white pepper
  • 1 cup 2% milk

Directions

  1. In a small saucepan, melt butter over medium heat.
  2. Whisk in the flour, salt and pepper until smooth.
  3. Gradually whisk in the milk.
  4. Bring to a boil; cook and stir for 2 minutes or until thickened. 

Use immediately or refrigerate.

Yield: 1 cup.
